I almost just threw up a hard boiled egg. Can you imagine how gross that would be? I can, my gosh I’ve eaten so many hard boiled eggs the last 7 days. 24 to be exact.
So why so many eggs? You see, Grant and I got bit by the “I’m too fat” bug. Him finally passing the mark into the obese zone (just barely but still), and me hitting the weight I was when I was full term pregnant with Maggie. Not cool. So we decided we were going to try out a few things to help us get into shape. Grant decided on the 21 Day Fix diet and exercise plan because we already had the stuff for it. Me on the other hand, I chose to count calories and fill all three rings on our Apple Watch (which includes standing, moving, and exercising for a certain amount of time).
Things were fine and dandy until I started getting greedy. I wasn’t seeing results as fast as I wanted so I turned to Pinterest. Pinterest is the land of perfect ideas. Including one called the Boiled Egg Diet. There are many versions of this diet, but the main idea is that a large part of your diet consists of eggs.
I fished around for one that I thought would be good and decided I was going to stick with it NO MATTER WHAT (I was tired of giving up on things). Grant decided he would do it will me in solidarity. Boy do I love that man. A Costco flat of eggs later, two bags of oranges, a bag of grapefruit and some chicken, beef and fish as well and we were on our way.
Days 1-3 were not that bad. I was still exercising and feeling like I was rocking it. Day 4 was okay. Day 5 I started to feel sluggish and tired and sick to my stomach from eating the same foods BUT I weighed myself and had lost 3 pounds so I felt I couldn’t give up! Day 6 was terrible. My Postural Orthostatic Tachycardia Syndrome (POTS) was significantly worse, I was really weak, really dizzy, had a hard time going on short walks, and couldn’t use the bathroom. Also, my appetite and desire for food were completely gone.
The last day, day 7… I ate my last two eggs in the morning and you all know how that went from the intro haha. I don’t think I’ll ever eat hard boiled eggs again in my life. To make matters worse I had to get my blood drawn and was super nervous because I already felt like I was going to pass out.
All in all, DON’T DO THE EGG DIET. As a matter of fact, don’t do ANY diet that is a get skinny-quick scheme! It’s not worth it! You should never EVER try to lose more than 2 pounds a week unless a doctor says otherwise. It’s just not healthy.
One upside however was I found the most delicious salmon recipe! I usually only like teriyaki salmon but this might have it beat!
The recipe is originally by Flavor The Moments, but I switched it up a bit and only used two 6 oz portions of salmon and substituted the olive oil for an extra tablespoon of fresh lemon juice.
